Pulled Pork

1. 1 pound of pork shoulder

2. 1 tablespoon paprika

3. 1 teaspoon black pepper

4. 1 teaspoon salt

5. 2 tablespoons sugar-free barbecue sauce

6. 1 cup water

Low-carb Sliders

1. 6 WiO SmartRolls

2. Extra barbecue sauce for serving (optional)

Step 1

Start by preparing the pork. Mix paprika, black pepper, and salt. Rub this mixture all over the pork shoulder.

Step 2

Place the seasoned pork in a slow cooker. Pour in the barbecue sauce and water. Cover and cook on low for 8-10 hours, or until the pork is tender and easily shreds with a fork.

Step 3

Once the pork is done, remove it from the slow cooker and shred it using two forks. Mix the shredded pork with some of the cooking liquid from the slow cooker to keep it moist.

Step 4

Cook the bacon in a skillet. (Pro tips on how to cook bacon)

Step 5

Toast the inside of the rolls in a skillet or broil the low-carb rolls in the oven to make them crispy.

Step 6

To assemble the sliders, slice open the low-carb rolls. Spoon some of the pulled pork onto the bottom half of each bun. Add the cooked bacon and drizzle with mozzarella cheese. (optional) add extra barbecue sauce if desired. Place the top half of the bun on top.

Step 7

Serve the sliders warm and enjoy a delicious low-carb meal without feeling guilty.

This recipe should make about 6 low-carb sliders but can easily be doubled or halved depending on how many people you're serving. Enjoy your low-carb BBQ Pulled Pork Sliders.
